What You’ll Need

To get started, gather the following ingredients and supplies:

  • Ingredients: 4 cups of fresh strawberries, 1 1/2 cups of granulated sugar, 1/4 cup of lemon juice, and 1 packet of pectin (about 1.75 oz).
  • Supplies: 5 pint-sized canning jars, a canning pot or large pot, jar lifter, ladle, and a funnel.

Step 1: Prepare the Strawberries

  1. Wash the Strawberries: Rinse your strawberries under cool water to remove any dirt or debris.
  2. Hull and Slice: Remove the green tops and slice the strawberries into smaller pieces. This makes them easier to mash.

Step 2: Mash the Strawberries

Use a potato masher or fork to mash the sliced strawberries in a large bowl. You can leave some chunks for texture if you prefer a chunkier jam. Aim for about 2 1/2 cups of mashed strawberries.

Step 3: Cook the Jam

  1. Combine Ingredients: In a large pot, combine the mashed strawberries, sugar, lemon juice, and pectin. Stir well until everything is mixed.
  2. Bring to a Boil: Place the pot over medium heat and bring the mixture to a rolling boil, stirring constantly. Once it reaches a boil, let it cook for 1-2 minutes.
  3. Check for Thickness: To check if your jam is thick enough, spoon a small amount on a plate and tilt it. If it holds its shape, you’re good to go!

Step 4: Sterilize the Jars

While your jam is cooking, it’s essential to prepare your jars:

  1. Wash Jars: In hot, soapy water, wash the jars and lids. Rinse thoroughly.
  2. Sterilize: Place the jars in a boiling water bath for 10 minutes to sterilize them. This step is crucial for safe canning.

Step 5: Fill the Jars

  1. Using a Funnel: Place the funnel over the first sterilized jar and ladle the hot jam into the jar, leaving about 1/4 inch of headspace at the top.
  2. Wipe the Rims: Make sure to wipe the rims of the jars with a clean cloth to remove any residue.
  3. Seal the Jars: Place the lids on the jars and screw on the metal bands until they are fingertip tight.

Step 6: Process the Jars

  1. Place in Canning Pot: Carefully place the filled jars back into the boiling water bath, making sure they are covered by at least an inch of water.
  2. Boil for 10 Minutes: Process the jars in boiling water for 10 minutes to seal them properly.
  3. Cool Down: Once processed, remove the jars with a jar lifter and place them on a clean towel or wire rack to cool completely.

Step 7: Enjoy Your Jam

After the jars have cooled, check that the lids have sealed properly by pressing down in the center. If it pops back up, it hasn’t sealed correctly. Store sealed jars in a cool, dark place. Enjoy your homemade strawberry jam on toast, in desserts, or as a delicious gift for friends and family!

Tips and Variations

  • Add Some Spice: Try adding a pinch of cinnamon or a splash of vanilla extract for extra flavor!
  • Mix with Other Fruits: Combine strawberries with raspberries or blueberries for a mixed berry jam.
  • Use Low-Sugar Pectin: If you prefer less sugar, look for low-sugar or no-sugar pectin options available at your local store.
